Standing room only at Sant'Eustachio, sugar and all

(Sample entry — replace with the real Rome write-up.) Sant'Eustachio is loud, brown, and unashamed. There is no filter menu. There is no third-wave grandstanding. There is a counter, a pile of receipts, and roughly forty people in a room built for twenty, all of them holding a tiny cup with a crown of pre-stirred foam on top.

The house move is that they pre-sugar the crema before it lands on your saucer, and there is a whole subculture that will tell you this is wrong. I disagree. A properly Roman espresso — dark, forward, resinous — takes to sugar the way a strong tea takes to milk. Fighting it is a category error.

How to actually order

Pay first at the register. Take the receipt to the counter. Slide it across, say "un caffè", drop a coin on top for the barista. Drink standing.
